We so enjoyed the 1st Popup Cafe and you certainly seemed to! We are back for round 2- bringing the very best in Plant Based Yum. Bangin' Burgers, Rainbow Buddha Bowls, All day Vegan Breakfast, Soul Bowl Hot Dish of the Day and the yummiest sweet treats!

In other News Little Ginger had an amazing weekend catering on the Isle of Wight at the Ocean Breath Yoga Retreat hosted by the beautiful Dani & Alva ~ a wonderful few days of Yoga, Meditation, Chats, Laughs & more as well as delicious Plant Based food from yours truly! It was a delight to feed everyone and receive such lovely feedback! Smiley happy faces and full happy tummies.
This Month's recipe is a really quick one - Oat & Fruit Cookies! Great for a simple healthy high fibre snack for Breakfast on the go or at any other time! Once you've had a go you can play around and add any nuts, seeds & fruit (and chocolate drops of course). Because they are so easy they are a great one to make with kids - just store in an airtight container and they will last as long as you let them!
Simple Oat & Fruit Breakfast Cookies
2 large bananas (or 3 medium) the riper the better
150g Rolled Oats (Gluten Free if necessary)
2 tbs ground Flaxseeds (I use Linwoods)
75g Smooth Peanut Butter (can substitute for alternative Nut Butter to suit diet)
A handful of fresh Blueberries
(can sub Raisins, dried Apricots, Dates, I added a handful of Choc drops with Blueberries & Magical Alchemy took place- you can add sunflower seeds, pumpkin seeds & roughly chopped nuts.... get freaky & experiment with cupboard store!)
How to Make
1. Mash the banana in a bowl (do not worry if there are a few lumps)
2. Mix in the Oats, Flax, PB to combine
3. Add your Blueberries & extras
4. Dollop a heaped tbsp of mix onto parchment lined baking tray & flatten each blob to a rough disc
- don't worry about them being too close as they do not spread much -
5. Bake at 180c for 20-25 mins
Leave to cool for 10 mins - make a cuppa & pile in!
